Chef Charlie Palmer invites you to the 8th Annual Celebration of Pigs & Pinot, March 22-23, 2013 at Hotel Healdsburg. The celebratory weekend offers a series of intimate dining and educational events hosted by Chef Palmer. A cast of Master Sommeliers and international celebrity chefs will showcase some of the world’s greatest Pinots with perfect pork pairings. All net proceeds from the Pigs & Pinot benefit Share Our Strength, local scholarships and charities.

Taste of Pigs & Pinot
Friday evening’s kickoff event is the lively Taste of Pigs & Pinot where guests sample 60 highly-acclaimed Pinot Noir wines competing in the Pinot Cup competition, both from Sonoma County and around the world. Tastings are served alongside a variety of pork dishes, including homemade sausages, charcuterie, grilled pork, pates and other special creations from Chef Palmer and Dry Creek Kitchen Chef de Cuisine Dustin Valette, guest chefs and local Healdsburg restaurants. Pinot Cup
The Pinot Cup is our annual wine competition where 60 hand-picked Pinot Noirs compete in a blind-tasting competition in hopes to be named “the best of the best” by a renowned judging panel. This year’s panel will include Bill Ward, Wine Writer for the Star Tribune, Greg Walter, Editor and Publisher, Pinot Report and Master Sommelier, Keith Goldston. The winner and runner-up will be revealed at Friday's Taste of Pigs & Pinot event.
Seminars
On Saturday afternoon, Pigs & Pinot participants can attend two seminars: Tournament of The Pig where four guest chefs will divide into two teams to prepare the best pork-inspired dishes in a iron-chef style competition hosted by Charlie Palmer and Mario Cantone, and “The Ultimate Pinot Smackdown” seminar led by Master Sommeliers, Keith Goldston, Fred Dame, Drew Hendricks and Michael Jordan. Spoonbar’s Swine and Wine Dinner
Saturday evening at h2hotel’s Spoonbar. Executive Chef Louis Maldonado (a 2009 San Francisco Chronicle Rising Star Chef) will play host to a cadre of some of the Bay Area’s most innovative young toques including David Barzirgan, John Paul Carmona and Evan Rich. Prepare to be delighted and surprised at this casual-chic four-course meal. Dinner will be paired with wines from two acclaimed Sonoma County Pinot Noir producers, Cobb Wines and VML. After dinner, guests are invited to continue the party at Hotel Healdsburg for after-dinner drinks and dessert. [More info]

Saturday evening’s Pigs & Pinot Gala features a sumptuous five-course dinner at Hotel Healdsburg’s Dry Creek Kitchen. As a collaborative offering, each course features a signature creation from Charlie Palmer and his guest chefs including: Elizabeth Falkner, Dean Fearing, Jose Garces and Craig Stoll, paired with two limited-production Pinot Noirs from highly acclaimed wineries including De Loach, Domaine A.F Gros, Kosta Browne, Martinelli and Sea Smoke. Mario CantonePigs & Pinot guest chefs will be divided into two talent-packed teams. This iron-chef style competition will be hosted by Charlie Palmer and the food loving actor, Mario Cantone so be so be prepared for some lively commentary. The two teams will be given a whole pig, which they will use to create two distinct dishes, along with ingredients they can find at Dry Creek Kitchen. The winning team will be determined by a pork-loving judging panel. And yes, the audience gets to taste, too.

Join Master Sommeliers Keith Goldston, Fred Dame, Drew Hendricks, and Michael Jordan for this exciting march-madness inspired wine seminar. Each Master Sommelier enters the room with four of his favorite Pinot Noirs covering four different regions of the world. Then the “Battle Royale” begins! The Master Sommeliers will have to sell you on their wine choices and dish it out in a head-to-head pitch contest followed by a tasting where you decide the winner. How often do you have four Master Sommeliers selling you on 16 great pinots and then a chance to taste them all!? So come and see how Drew “The baby faced rookie” Hendricks fares against Keith “Where is he?” Goldston while Michael “No, not that Michael” Jordan rumbles with Fred “is he God or Satan” Dame. This will be a smack down to remember; you the audience will get to drink great Pinots while watching legendary battles and then crown the winner!

The evening will begin with an artisanal cocktail from Spoonbar’s ingenious mixologist Daniel “Cappy” Sorentino followed by four distinct courses made from a locally raised hog. Sharing equal time in the spotlight will be our local vegetables, offering a counter balance to the pork, creating both art and flavor on the plate. Dinner will be paired with wines from two acclaimed Sonoma County Pinot Noir producers, Cobb Wines and VML. After dinner, guests are invited to continue the party at Hotel Healdsburg for after-dinner drinks and dessert.

On March 22-23, pork and pinot lovers from around the country gathered in Sonoma wine country for Chef Charlie Palmer’s Eighth Annual Pigs & Pinot weekend, held at the award-winning Hotel Healdsburg and Dry Creek Kitchen. Our honored guest chefs, Jose Garces, Dean Fearing, Elizabeth Falkner and Craig Stoll, along with top Pinot Noir-producing winemakers, lent their talents to raise serious funds for Share our Strength and local Sonoma County charities and organizations. HE SOLD-OUT BENEFIT kicked off with Friday’s Taste of Pigs & Pinot event featuring over 60 Pinot Noirs alongside pork tastings including: Elizabeth Falkner’s Pork Belly Confit on Averna Caponata, Jose Garces’ Fritada con Las Cosas Finas, Dean Fearing’s Pulled Pork Street Taco, Craig Stoll’s Delfina Mortadella di Prato & Sportivi on Pizza Bianca, Chef Dustin Valette’s Crispy Pork Belly Lollipops and Chef Palmer’s Garlic Rubbed Kurobuta Pork Ham.
Many notable hometown chefs joined in on the fun, including: Diavolo, serving Vinegar Braised Pig Trotters, Spoonbar serving a Vietnamese Sausage Bahn-Mi and Bravas Bar de Tapas with Fennel Braised Pork Cheek Bocadillos with Piquillo Peppers and Salsa Verde.
Friday evening also included the reveal of the highly anticipated Pinot Cup winner. The notable judging panel of the 2013 Pinot Cup—a blind tasting competition among 60 hand-picked Pinot Noirs—included wine writer for the Star Tribune, Bill Ward, Editor & Publisher of the Pinot Report, Greg Walter and Master Sommelier, Keith Goldston. Congratulations to the Pinot Cup Winner, Roth Estate 2010 Pinot Noir, Sonoma Coast, California and the Pinot Cup Runner-up: Te Kairanga 2011, John Martin Reserve Pinot Noir, Martinborough, New Zealand. Through April 14th, enjoy Roth Estate Pinot Noir by the glass at Dry Creek Kitchen in celebration of its 2013 Pinot Cup victory!
TOURNAMENT OF THE PIG, On Saturday morning guests filed into Relish Culinary Adventures, to attend the first seminar, “Tournament of the Pig,” which divided the four gala toques into two teams pitting them against each other in a Battle of the Chefs style competition. The emcee, actor and comedian Mario Cantone, stole the show providing guests with culinary and comical commentary throughout the competition, including an Oscar-worthy Julia Child performance in a hilarious reenactment with Dean Fearing and Charlie Palmer that had guests doubling over in laughter.
Chefs Craig Stoll (Delfina, San Francisco) and Jose Garces (Garces Group and Iron Chef Star) teamed up against Chefs Elizabeth Falkner (Krescendo, Brooklyn) and Dean Fearing (Fearing’s, Dallas). A 150-pound pig was provided by DG-Langley Farms along with a market basket of secret ingredients to inspire two creations from each chef team, one People’s Choice dish voted on by the attendees and one presented to the discerning judging panel whose spots were auctioned off by Mario Cantone. These critics secured their coveted seats on the panel by generously donating between $2,000-2,500 each, amounting in an extra $11,000 for Pigs & Pinot charities. Each team was assisted by Chef Palmer, Chef Dustin Valette (Dry Creek Kitchen), and sous chefs from their respective restaurants. While votes were close, Team Falkner and Fearing took home the bacon winning both the People’s Choice Award for their small plate offering of “Modern Chowder”.
AT THE “MARCH-MADNESS” STYLE Ultimate Sommelier Smackdown Seminar competition led by master sommeliers— Keith Goldston,
Fred Dame, Drew Hendricks, and Michael Jordan—each host entered his personal selection of four Pinot Noirs from around the world and then “pitched” the audience on why their wine picks were the best. Four rousing rounds later, the audience ultimately named Michael Jordan, in his first ever Pigs & Pinot appearance, the 2013 Smackdown King for selecting the winning wine, 2011 Lucia, Soberanes Vineyard Pinot Noir, Santa Lucia Highlands, California. Fred Dame’s selection, Bergström 2010 Homage Pinot Noir, Willamette Valley, Oregon was awarded runner-up.
ON SATURDAY NIGHT, the Pigs & Pinot five-course Gala Dinner was held at Hotel Healdsburg’s Dry Creek Kitchen. As a collaborative offering, each course featured a signature creation from Palmer or one of the visiting master chefs, paired with limited-production Pinot Noirs from acclaimed wineries DeLoach Vineyards, Domaine A.F. Gros, Kosta Browne, Martinelli Winery and Sea Smoke.
Hotel Healdsburg’s sister property h2hotel also joined in the celebration by offering a casual four-course “Swine & Wine” dinner prepared by h2hotel’s Spoonbar Executive Chef Louis Maldonado and some of the Bay Area’s most innovative chefs, David Bazirgan of Fifth Floor, John Paul Carmona, formerly of Manresa, and Evan Rich of Rich Table. Dinner was paired with wines from two acclaimed Sonoma County Pinot Noir producers, Cobb Wines and VML Winery.

Picking Pinots
Ever wonder how our wine experts take on the challenge of choosing just 60 wines to participate in each year’s Pigs & Pinot event? Q: How are Taste wines chosen?
Daryl: Each year we have an open call and allow any pinot noir maker from any region around the world to submit their entry (interested wineries can email me directly at daryl@pigsandpinot.com).
Our goal is to give all quality producing wineries a chance to showcase their wines, however, since we are limited to show only 60 wines per year, many qualified wineries are added to our waitlist and provided with the opportunity to showcase their wines the following year. Wines that are confirmed to participate are only guaranteed to show during the present year’s event, as it is important for us to rotate wineries in and out of the line up in order to allow room for new brands and to keep each year’s event interesting and fresh. With that said there are a small handful of wineries that our Pigs and Pinot Team feel are of the best in the world and these you may see at the event each year.
Along with the individual winery requests we also ask our Sommelier Team for their recommendations. Invitations to these nominated wineries are sent in the July prior to the event and all participating wines are confirmed by the end of the year.
Local Sonoma County wineries will always make up the majority of the 60 wines chosen; however, as this is an international pinot noir event it is important to include pinots from other parts of California, Oregon, Europe and the Southern Hemisphere.
It is very important to us to provide our guests with an impressive selection of the most delicious and sophisticated pinots; therefore, each year’s wine portfolio is a blend of old favorites and new discoveries.
Q: How are Pinot Cup judges chosen?
Daryl: Our Pigs and Pinot committee of wine experts is responsible for choosing our Pinot Cup judges. We seek industry experts, usually in the media field, who have great tasting experience and a deep knowledge of wine. We try to select one local judge, one from greater California and one with national status.
Q: How are Smackdown wines chosen?
Daryl: Each participating Pigs and Pinot Smackdown Sommelier is responsible for choosing (and “selling”) their favorite four wines that they have discovered within the past year.
Q: How are Gala wines chosen?
Daryl: We choose five select wines to pair with each Gala dinner dish. Two of the wines must be anchor brands from California. These are very high quality, high profile wines that have been well established or recently rated very well in notable wine publications. The third wine is the winner of last year’s Pinot Cup and the fourth is always a Burgundy hand selected by our P&P wine team. The fifth and final wine is either a high profile or new and exciting international brand.

RUSS’S KITCHEN
In connection with Community Based Service Learning at Cardinal Newman High School, Courtland Palmer started Russ’s Kitchen Project which will provide food and aid for the girls of Hogar Doña Chucha and Altagracia, who are abandoned, orphaned and disadvantaged in Santo Domingo, Dominican Republic. Courtland is determined to build a panadería (kitchen/bakery) in Santo Domingo and has set a personal goal to raise $85,000. CULINARY INSTITUTE OF AMERICA SCHOLARSHIP
Pigs & Pinot has teamed with the Culinary Institute of America to create the “Charlie Palmer’s Pigs & Pinot Scholarship”. This fund will provide one Sonoma County resident the opportunity to attend the Culinary Institute of America by granting a one-time $50,000 award. Candidates must have great financial need and demonstrate the following qualities: a passion for the industry and its products, a commitment to culinary education, and a high ethical standard within the culinary industry. SONOMA STATE WINE PROGRAM SCHOLARSHIP
Pigs & Pinot has paired up with Sonoma State University School of Business and Economics to provide one scholarship for an undergraduate or graduate student concentrating in Wine Business. Charlie Palmer’s Pigs & Pinot has graciously donated this scholarship in hopes of making a difference in one local Sonoma County student’s life. The recipient of this scholarship will demonstrate the following qualities: a passion for the industry and its products, a commitment to wine education, and a high ethical standard within the field of wine. Recipients must show financial need and be a Sonoma County resident. The scholarship will provide a one-time $10,000 award to pay for tuition, books, fees, housing and other expenses to support the student’s career advancement and educational accomplishment. SONOMA COUNTY FARM BUREAU
Pigs & Pinot has paired up with the Sonoma County Farm Bureau to support the Wilson Winery “Children of Sonoma Vineyard Workers Scholarship.” Scholarships of $700 to $2,000 will be awarded to children of Sonoma County vineyard workers. Scholarships are open to high school seniors continuing their education and to students who are already in a college, trade or technical school.
Wilson Winery provides these annual scholarships because they believe the children of
Sonoma County vineyard workers should not be limited by financial hardships in their
pursuit of educational opportunities. This year Wilson Winery will award more than
$10,000 in scholarships to deserving students.
