Chef Charlie Palmer invites you to the Third Annual Celebration of Pigs and Pinot, March 14-March 16 2008 at Hotel Healdsburg. The celebratory weekend offers a series of intimate dining and educational events hosted by Chef Palmer. A cast of Master Sommeliers and international celebrity chefs will showcase some of the world’s greatest Pinots with perfect pork pairings. Proceeds from this event will benefit Share Our Strength.

Sample over 50 hand-selected, highly acclaimed Pinot Noirs from Sonoma County and around the world including William Selyem, Kosta Browne, Dutton Estate, Diamond Valley from Australia, and Domaine de la Vougeraie and Jean-Claude Boisset from Burgundy.

Savor a wide variety of pork dishes such as homemade sausages, charcuterie, grilled pork, pâtés and special creations from chefs Charlie Palmer, Michael Ellis of Dry Creek Kitchen, David Burke of davidburke & donatella, NYC; Luke Mangan of South, San Francisco and Australia; Nancy Oakes of Boulevard, San Francisco; Philippe Rispoli of France.

Instructor: Keith Goldston, Master Sommelier

Sixteen Pinot Noirs from a selection of the world’s top wineries – all in two hours! Master Sommelier Keith Goldston will lead an informative tasting focusing on the selected wines and the wine regions that they represent. A blind tasting will follow where participants will vote for their favorite. Which winery will walk away with the cup? Only you can decide!

At Relish Culinary Adventures, Healdsburg

Here’s your chance to go beyond the back bacon and far from the belly as Chef Charlie Palmer and guest Chef Philippe Rispolli explore a few more exciting bits of this tasty beast. In a demo-style class, you’ll experience the distinctive textures and flavor profiles of pork cheeks, smoked and fresh pig trotters, and the classic pate de campagne, all highlighted by accompanying wine selections. It’s a two hour search for that perfect pairing: Pigs and Pinot.

A not-to-be-missed, sumptuous 5 course wine pairing dinner with a twist. Hosted at the Dry Creek Kitchen, each course will feature the culinary creations of a renowned chef – Charlie Palmer, Michael Ellis, David Burke, Luke Mangan, Nancy Oakes and Philippe Rispoli – paired with two limited production Pinot Noirs from a highly acclaimed winery including Rochioli, Kosta Browne, Dutton Estate, Diamond Valley from Australia, and Domaine de la Vougeraie and Jean-Claude Boisset from Burgundy.
