The celebratory weekend offers a series of intimate dining and educational events hosted by Chef Palmer. A cast of Master Sommeliers and international celebrity chefs will showcase some of the world’s greatest Pinots with perfect pork pairings. Friday evening’s kickoff event is the lively Taste of Pigs & Pinot where guests sample 60 highly-acclaimed Pinot Noir wines competing in the Pinot Cup competition, both from Sonoma County and around the world. Tastings are served alongside a variety of pork dishes, including homemade sausages, charcuterie, grilled pork, pates and other special creations from Chef Palmer and Dry Creek Kitchen Chef de Cuisine Dustin Valette, guest chefs and local Healdsburg restaurants. The Pinot Cup is our annual wine competition where 60 hand-picked Pinot Noirs compete in a blind-tasting competition in hopes to be named “the best of the best” by a renowned judging panel. This year’s panel will include Jon Bonne, Wine Editor for the San Francisco Chronicle, Laurie Daniel, Wine Writer for the San Jose Mercury News and Master Sommelier, Fred Dame. The winner and runner-up will be revealed at Friday's Taste of Pigs & Pinot event.

 

Seminars

On Saturday afternoon, Pigs & Pinot participants can attend two seminars: “Tournament of The Pig” where Charlie Palmer and three guest chefs will divide into two teams to prepare the best pork-inspired dishes as determined by a pork-loving judging panel, and “The Ultimate Pinot Smackdown” seminar led by Master Sommeliers, Keith Goldston, Fred Dame, Drew Hendricks, and William Sherer. Spoonbar’s “Eat 100” Pigs & Pinot Wine Dinner

An exclusive 4-course “Eat 100” themed dinner on Saturday evening at h2hotel's Spoonbar.This special dinner will begin with a welcome artisan cocktail followed by a celebratory Pork and Pinot Noir Wine Dinner prepared by Spoonbar Executive Chef Louis Maldonado ( a Chronicle rising star 2009 and former Chef de Cuisine of Aziza) and Chef Mateo Granados of Healdsburg’s Mateo’s Cocina Latina, named one of the top 10 new restaurants of 2011 by the San Francisco Chronicle. Dinner will be accompanied by wines from premier Sonoma County Pinot Noir producers: Cartograph and Emeritus. Guests will indulge in a truly local experience where all ingredients are sourced from within 100 miles of Healdsburg with, of course, a locally raised pig as the centerpiece. The two teams will be given a whole pig, which they will use to create two distinct dishes, along with ingredients they can find at Dry Creek Kitchen. The winning team will be determined by a pork-loving judging panel. And yes, the audience gets to taste, too.

he sold-out 6th annual weekend kicked-off with Friday’s Taste event featuring over 60 Pinot Noirs alongside small pork bites such as Grape Marinade and Roasted Pork Loin from Charlie Palmer; Wild Boar Ravioli from Nancy Oakes; and Marc Forgione’s Creme Fraiche Agnolotti, Black Pig Meat Co. Bacon and Potato Brown Butter. Bryan Voltaggio impressed guests with his Crispy Pork Trotters while Philippe Rispoli shared his Toasted Farmers Bread served with Pure Pork Rillettes and Shaved Black Truffles.

Many local Healdsburg restaurants joined in on the fun, including Cyrus who doled out Steamed Pork Buns with Hoisin Sauce and Zin who served Piggy Pastrami with House-made Sauerkraut and Zin Dark Rye.

Guest chefs were joined by Charlie Palmer Group executive chefs including Amar Santana (Charlie Palmer at Bloomingdale’s), Matt Hill (Charlie Palmer Steak DC), Scott Romano (Charlie Palmer at The Joule) and Dry Creek Kitchen Chef de Cuisine, Dustin Valette. The night sweetened up with pork pastries, including Dry Creek Kitchen Pastry Chef Yulanda Santos’ Twinkies which were filled with mouthwatering bourbon caramel and bacon mascarpone mousse.

Friday evening also included the reveal of the highly anticipated Pinot Cup winner. The notable judging panel of the 2011 Pinot Cup—a blind tasting competition among 60 hand-picked Pinot Noirs—included: Dan Berger (national wine columnist), Leslie Sbrocco (epicurean author and television host) and Drew Hendricks (master sommelier for Pappas Restaurant Group). Receiving top honors was Domaine Parent Winery for their 2007 Domaine Parent Pinot Noir, Pommard 1er Cru, Burgundy and the runner-up was Boulder Bank for their 2009 Boulder Bank Pinot Noir, New Zealand, Marlborough.

Tournament
On Saturday afternoon, Pigs & Pinot participants attended two seminars.  At “Tournament of the Pig,” held at Relish Culinary Adventures, Bryan Voltaggio and Michael Voltaggio (Top Chef Season 6 Finalist and Winner) teamed up against Marc Forgione (The Next Iron Chef Season 3 Winner) and Amar Santana (America’s Next Great Restaurant Season 1 Featured Chef) to create the best pork small plate and most impressive pork main dish. Each team was given a Gleason Ranch 90 lb suckling pig and market basket of secret ingredients. Their tasks were to butcher, prepare and present their dishes to a panel of judges, randomly selected from the audience. Both teams came out a winner as the Voltaggio’s won for best small plate and the Forgione/Santana team took the honors of best main dish.

Smackdown
At the Ultimate Sommelier Smackdown Seminar—a “March-madness” style competition led by master sommeliers: Keith Goldston, Fred Dame, Drew Hendricks and William Sherer—each host entered his personal selection of four Pinot Noirs from around the world and then “pitched” the audience on why their wine picks were the best. Four heats later, the audience ultimately chose Soter Vineyards, 2008 Pinot Noir, Mineral Springs Ranch as the winner and Kosta Browne, 2007 Pinot Noir Koplen Vineyard as the runner-up.

Later that night, the Pigs & Pinot five-course Gala Dinner was held at Hotel Healdsburg’s Dry Creek Kitchen.  As a collaborative offering among the master chefs, each course featured a signature creation from Palmer or one of his guest chefs, paired with limited-production pinot noirs from wineries: Woodenhead (Pinot Cup 2010 winner), Merry Edwards Winery, Rochioli Vineyard, Domaine Parent and Bodega Chacra.

On March 23-24, pork and pinot lovers from around the country gathered in Sonoma wine country for Chef Charlie Palmer’s seventh annual Pigs and Pinot weekend, held at the award-winning Hotel Healdsburg and Dry Creek Kitchen. Our honored guest chefs, Michael Mina, Michael White, Guy Fieri and Casey Thompson, along with top pinot producing winemakers, lent their talents to raise serious funds for three worthy causes: Share our Strength, Russ’s Kitchen and Healdsburg’s Tuesdays in the Plaza.

HE SOLD-OUT BENEFIT kicked off with Friday’s Taste of Pigs & Pinot event featuring over 60 Pinot Noirs alongside pork tastings including: Michael Mina’s Paella Risotto Cake with lardo wrapped grilled laughing bird shrimp, Michael White’s Cotechino with lentils, nebbiolo mostarda, Casey Thompson’s Crispy Pig’s Ear Street Tacos and Bloody Mary Bacon Shooters and Guy Fieri’s Pork Pizzas.

Many notable Healdsburg chefs joined in on the fun, including: Cyrus serving Pork Belly Tacos with kimchi and hoisin, Barndiva serving Quail Egg BLTs and Willi’s Seafood & Raw Bar serving Salt and Pepper Ears.

Friday evening also included the reveal of the highly anticipated Pinot Cup winner. The notable judging panel of the 2012 Pinot Cup—a blind tasting competition among 60 hand-picked Pinot Noirs—included: Jon Bonne, San Francisco Chronicle Wine Editor, Laurie Daniel, San Jose Mercury News Wine Writer and Master Sommelier Fred Dame.

ON SATURDAY AFTERNOON, Pigs & Pinot participants attended two seminars – the first focused on all things pork while the latter concentrated on pinot. At Tournament of the Pig, held at Relish Culinary Adventures, Food Network personality Guy Fieri livened up the action as the Master of Ceremonies, providing guests with culinary and comedic commentary. Michael Mina (Michael Mina, SF) and Casey Thompson (Top Chef Season 3 finalist) teamed up against Michael White (Marea, NYC) and Dustin Valette (Dry Creek Kitchen).

Guy Fieri raises an additional $7,500 for beneficiaries!
Each team was given a Gleason Ranch 90 lb. suckling pig, along with a market basket of secret ingredients and were tasked with creating a small plate and a main dish incorporating pork. Chef Palmer stepped in as the resident butcher while Guy Fieri sparked an impromptu auction to win a spot on the judging panel! Three guests each generously donated $2,500 to sample and vote on the dishes prepared by the all-star chefs. While votes were close, Team Mina and Thompson won the People’s Choice Award for their small plate offering Wood Oven Roasted Pork Shoulder with creamy polenta, shaved fennel and celery salad; while White and Valette won the judges vote for their outstanding main dish: Wood Oven Roasted Devils Gulch ‘Porchetta’ with sautéed kidneys, Valette prosciutto wrapped tenderloin, root vegetables and pork jus.

Smackdown
AT THE “MARCH-MADENESS” STYLE Ultimate Sommelier Smackdown Seminar competition led by master sommeliers—Keith Goldston, Fred Dame, Drew Hendricks and William Sherer—each host entered his personal selection of four Pinot Noirs from around the world and then “pitched” the audience on why their wine picks were the best. Four rounds later, the audience ultimately named Fred Dame the 2012 Smackdown King for selecting Talbott 2009 Cuvee RFT Diamond T Vineyard Monterey County Pinot Noir as the winner and Beaux Freres 2009 Beaux Freres Vineyard Ribbon Ridge Oregon as the runner-up.

But the excitement of the competition didn’t end there. Following the final round, one pinot enthusiast popped the question to their wine tasting companion, resulting in the first-ever Pigs & Pinot marriage proposal!

Tournament
ON SATURDAY NIGHT, the Pigs & Pinot five-course Gala Dinner was held at Hotel Healdsburg’s Dry Creek Kitchen. As a collaborative offering among the master chefs, each course featured a signature creation from Palmer or one of his guest chefs, paired with limited-production pinot noirs from acclaimed wineries Brooks, Domaine Aurélien Verdet, Evening Land Vineyards, Kanzler Vineyards and Williams Selyem.

Hotel Healdsburg’s sister property h2hotel also joined in the celebration by offering a casual five-course Spoonbar “Eat 100” dinner prepared by h2hotel’s Spoonbar Executive Chef Louis Maldonado and Chef Mateo Granados of Healdsburg’s Mateo’s Cocina Latina. Guests indulged in a truly local experience as all ingredients were sourced from within 100 miles of Healdsburg and were accompanied by wines from premier Sonoma County Pinot Noir producers, Cartograph and Emeritus.

Q: How are Taste wines chosen?

Daryl: Each year we have an open call and allow any pinot noir maker from any region around the world to submit their entry (interested wineries can email me directly at daryl@pigsandpinot.com).

Our goal is to give all quality producing wineries a chance to showcase their wines, however, since we are limited to show only 60 wines per year, many qualified wineries are added to our waitlist and provided with the opportunity to showcase their wines the following year. Wines that are confirmed to participate are only guaranteed to show during the present year’s event, as it is important for us to rotate wineries in and out of the line up in order to allow room for new brands and to keep each year’s event interesting and fresh. With that said there are a small handful of wineries that our Pigs and Pinot Team feel are of the best in the world and these you may see at the event each year.

Along with the individual winery requests we also ask our Sommelier Team for their recommendations. Invitations to these nominated wineries are sent in the July prior to the event and all participating wines are confirmed by the end of the year.

Local Sonoma County wineries will always make up the majority of the 60 wines chosen; however, as this is an international pinot noir event it is important to include pinots from other parts of California, Oregon, Europe and the Southern Hemisphere.

It is very important to us to provide our guests with an impressive selection of the most delicious and sophisticated pinots; therefore, each year’s wine portfolio is a blend of old favorites and new discoveries.

 

Q: How are Pinot Cup judges chosen?

Daryl: Our Pigs and Pinot committee of wine experts is responsible for choosing our Pinot Cup judges. We seek industry experts, usually in the media field, who have great tasting experience and a deep knowledge of wine. We try to select one local judge, one from greater California and one with national status.

 

Q: How are Smackdown wines chosen?

Daryl: Each participating Pigs and Pinot Smackdown Sommelier is responsible for choosing (and “selling”) their favorite four wines that they have discovered within the past year.

 

Q: How are Gala wines chosen?

Daryl: We choose five select wines to pair with each Gala dinner dish. Two of the wines must be anchor brands from California. These are very high quality, high profile wines that have been well established or recently rated very well in notable wine publications. The third wine is the winner of last year’s Pinot Cup and the fourth is always a Burgundy hand selected by our P&P wine team. The fifth and final wine is either a high profile or new and exciting international brand.
